Quick 'n' Easy Mini Dairy Free Pizzas

All of a sudden the dairy free 'Baby' has decided she loves cheese!

Not actually cheese you understand, but the nearest thing to cheese, that I've found in the UK.

It's this one, Violife. I'm glad she waited until it became available in larger Tesco stores, as it's now a whole lot more easier to get hold of it!

It's only taken 'Baby' a few years to get used to the idea, but now she wants cheese on everything and quite often by itself! This I cannot quite understand, as it doesn't taste so good by itself and un-toasted (in my humble opinion), but she is happy, so we're now having it on everything.

She has also (due to an unhappy mistake at school) decided she loves pizza, but I can't always be bothered to go to the phaff of making one. 


A new favourite is born!

However, at the weekend, The Hub came across these burger thins by Kingsmill (they cost £1.30 for a pack of 6 in Tesco). He got them because we had an impromptu barbecue in the back garden and 'Baby' can never manage a whole roll, so he thought these would do the trick. They did! And the next day, The Hub had a brainwave - to use them up, he decided to see if they would work as mini pizza bases, and they did! Huzzah!

So, it doesn't take too much imagination, to work out how we did it. We used Seeds of Change Sundried Tomato and Basil Stir Through but you could use tomato puree. The Hub spread it thinly over the outsides of the thins and then sprinkled on the Violife. 


Violife Original grates really well.

Popped in the oven around 180 for about 15 mins and...

Hey presto!

They're the perfect size for lunch and would make great picnic or buffet bites too! And of course you could add ham, and other toppings of your choice, if you so wish!

If you're wondering what's in the thins, well they're not gluten free, so no good for me, but as well as being dairy free, they're also egg free, so hopefully good for a fair number of you!

Ingredients:

Wheat Flour (with calcium, iron, niacin (B3) and thiamin (B1)), Water, Yeast, Wheat Protein, Dextrose, Vegetable Oils (Sustainable Pam, Rapeseed), Salt, Sugar, Soya Flour, Emulsifiers: E471, E481; Vinegar, Stabilisers: Xanthan Gum, Cellulose Gum; Preservative: Calcium Propionate (added to inhibit mould growth); Flour Treatment Agents: Ascorbic Acid (Vitamin C), E920.

Allergens:

Wheat/Gluten.
Doesn't mention nuts.
